Philosophy

We, the employees and owners of the restaurant Witwe Bolte are especially committed to the traditional home-style cooking Austrian cuisine, supplemented with various delicacies and vegetarian viands. It is our strong wish to pursue a rather natural and authentic cooking style. Since 1982 the fortunes of Witwe Bolte lie in the capable hands of the brothers Hans and Willibald Kamleithner and their friend Erich Jost. Due to those three men and their hard working staff Witwe Bolte is nowadays known and respected as a bourgeois meeting place for fastidious gourmets. In the last years the menu was further expanded by head chef Clemens Pollack and now contains lots of new vegetarian dishes and primary products from the surrounding Au forests.
We try to make every guest feel at ease and comfortably coddled by Witwe Bolte’s unique atmosphere and our culinary pleasures, all tested and awarded with the Austrian Environmental Labelling. Combined with the mouth-watering creations of head chef Clemens Pollak, a big assortment of precious wines are waiting for you to caress your senses. To preserve traditional values, to improve the Good and to guarantee the highest quality possible is the main purpose and the general policy of the Witwe Bolte team.
Our heart and soul belongs to the Austrian cuisine with its many fresh and impeccable products from organic and semi-natural cultivation as well as meat from adequate animal housing directly from the farmer.
Witwe Bolte is “a contemporary institution for body and soul”.
Its our main duty to adapt our menu to the current season. Starting the year with fresh morels from the Au forest to wild garlic and dandelion up to asparagus, strawberries and mushrooms as well as crisp salads and vegetable dishes can be found in the menu. Surely in their prime season game, lamb and fish are included as well.
Every month head chef Clemens Pollak creates a 3 and 4 course menu and our sommelier selects the most suitable wine, a unique and great experience which you should not miss. There’s nothing left to say but “enjoy your meal!”
